Vegan Chocolate Chip Cookies are the best!

The best part about vegan chocolate chip cookies is that I can eat a spoonful of dough without any fear of illness (raw eggs are frequently contaminated with salmonella)

Here is one recipe I like, it is just a veganization of the traditional Nestle Toll House recipe, although I also reduce the salt and increase the vanilla slightly.

First mix 3 tsp. of Ener-G Egg Replacer with 4 Tablespoons of warm water, whisk thoroughly (Pampered Chef sells a tiny whisk that is perfect for this but a fork will work too). Let this set while you make mix everything else, and whisk thoroughly one more time before adding to dough.

Stir together in small mixing bowl (or sift together if you have one)

2 1/4 cups flour, 1 tsp baking soda, 1/2 tsp salt

In large mixing bowl cream together with fork

2 sticks Earth Balance vegan buttery sticks softened slightly (I just get them out first, unwrap them and stick them in the bowl right after mixing the egg substitute and it softens while I pull out all the other ingredients) ; 3/4 cup organic sugar; 3/4 cup organic brown sugar

add 2 tsp organic vanilla and Ener-G mix and stir with wooden spoon till combined.

Stir in 2 cups of vegan semi-sweet chocolate chips (Ghirardelli for instance which are made with cocoa butter instead of milk products, although I am partial to Trader Joe’s)

Drop by teaspoonfuls onto ungreased cookie sheet and bake about 10 minute in the middle of a 375 degree oven.

Let them cool on the pan for a minute or two before transferring to the rack (and of course eating a nice warm one!)

A couple items you may not have in your house if you are new to vegan baking which are not hard to find at Sprouts, Whole Foods, or other vegan friendly groceries are the egg replacer, vegan buttery sticks and vegan chocolate chips. Look for “EnerG Egg Replacer” as this powder can easily be substituted into most recipes calling for eggs and really works, and earth Balance is the best I have tried of the vegan butter replacements. I even make a vegan Lemon Curd with this stuff! Vegan chocolate can be found everywhere now, even at Target groceries.

Try it, you will like it, and so will your heart and arteries. 🙂  That being said they are still just cookies, so do what I do if you don’t still have children at home, only bake them with a place to take them. This way I get a couple warm fresh ones, make someone else feel appreciated and don’t eat the whole 3 dozen myself. Tomorrow I say thank you to the wonderful staff at the Basha’s pharmacy where I am staffing a vaccination station.
